Blackened Chicken Caesar SaladI don’t have the words to explain how good this blackened chicken caesar salad is. You have to try it. Luckily, blackening spice is easy to make and adds a whole new spicy dimension to caesar salad. The Cajun flavours it brings to the party stand up to the creamy, garlicky caesar dressing.

The seaside Fish Pot restaurant in Barbados provided inspiration for this simple recipe. I enjoyed a hearty caesar salad with blackened chicken while on vacation last year.  It was so good, I had to recreate it at home. Since it only takes 15 minutes to prepare, I’ve been making it for dinner regularly ever since.

Simple Blackening Spice for Easy Blackened Chicken

In a jar, add two tablespoons of cayenne pepper and garlic powder, with one tablespoon of dried basil, thyme, oregano, onion granules, smoked paprika and ground cumin.

Add one and a half tablespoons of sugar, and half a tablespoon each of celery salt, ground black pepper, and ground pink peppercorns. Shake the mixture to combine.

How to Make Caesar Salad with Blackened Chicken

Coat 300g of sliced chicken breast with two tablespoons of the blackening spice mixture. Fry the chicken in coconut oil for a few minutes on each side until cooked through.

To make the Caesar dressing, combine three tablespoons of natural yogurt with the juice of half a lemon, three tablespoons of olive oil, one crushed garlic clove, two tablespoons of grated parmesan, and a splash of Worcester sauce.

Place the lettuce in a large bowl, and add the chicken, several anchovies, and the Caesar salad dressing.

How to Make Blackening Spice

Blackening spice is ridiculously easy to make and will keep in the cupboard for ages. There are quite a few ingredients needed, but it’s just a case of throwing them together. Once you’ve made the blackening spice mixture, all you need to do is sprinkle a couple of tablespoons of fish, meat or poultry. It’s great with chicken and delicious with salmon.
